How much gluten does it take?

Mystery solved – looks like it was either the  cream cheese or the bagel. My daughter called to say she had eaten 2 ½ bagels with cream cheese (Monday night with me, Tuesday morning and noon) and then she broke out in her worst case of hives ever, and all the other symptoms came along right on schedule. Her symptoms are different from mine, and different from my son’s, different from my friends, yet for each of us, our symptoms always occur in a predictable pattern.

I’m on day four of insomnia, restless leg syndrome, sleepy bugs in eyes, dry eyes in the middle of the night. All this from ONE BITE of something which is labeled gluten-free. It’s no wonder people say they tried gluten-free, but it didn’t make a difference. Over the past year, I’ve found that my symptoms, from one tiny accidental exposure, take 12 days to resolve. I’ve gotten sick from cross contaminated supplements, from using a bar of soap that had wheat germ as an ingredient, from one slice of salami (my friend sent a sample to the University of Nebraska for testing and came back at only 7 PPM).

Nothing to do for now except ride it out.

For now, I have decided to eat no processed food, except the cream from the local dairy that I use to make my yogurt. I have a weeklong trip starting June 17, and health is my primary focus until then. So, only yogurt, fruit, vegetables and meats – all locally sourced or from my little garden.
